The ideal soup for those who want to enjoy a light, delicious meal on a cold winter night is cabbage soup. It is easy to make, and once you try it, you will want to eat it at least once a week. And if your kids show you eating it, they will probably want to eat it too!
Ingredients (Serves 4 people)
1/2 medium cabbage, sliced into 1/4-inch ribbons
3 large, peeled and chopped potatoes
3 sliced cloves of garlic
2 thinly sliced yellow onions
1/2 cup of Parmesan or Cheddar cheese
1 cup of mushrooms
2 tablespoons of extra virgin olive oil
2 tablespoons of salt
Heat the extra virgin olive oil in a large thick-bottomed pot. Add the onions and left them soften (this will take about 3 minutes). Once that is done, add the garlic, half the salt and the potatoes. Stir them all together well for a few minutes. Once the potatoes are falling apart, crush them into really small pieces. Throw in the cabbage and the mushrooms and cook for about 5 minutes in medium heat, until both of them soften too. Towards the end, add the rest of the salt. Sprinkle with Parmesan or Cheddar cheese and serve immediately.
If you like your soup to be more spicy, you can use 1 tablespoon of cayenne pepper or curry. Use only fresh mushrooms. Canned mushrooms will not taste equally well. If you are going to use cayenne pepper, then it would be best to use Parmesan cheese, so that the soup will not be extremely spicy. Instead of carrots, celery sticks can be used. Waiting for the ingredients to soften is extremely important, therefore you should be patient, otherwise the result will be bad.
