Most people are used to eating their fruits raw. For some reason, they seem to think this is only way to eat fruits. They would be surprised to know that some fruits can actually be used to prepare soups, which taste much better and are actually considered to be complete meals.The following recipe is amazingly delicious!
Ingredients (Serves 8 people)
1 tablespoon minced ginger
3 cups chopped strawberries
2 cups chopped pineapples
1 cup chopped apricots
1 cup chopped mango
1 piece lime peel
1 piece orange peel
2 glasses of water
1 cup of brown sugar
1/4 cup of fresh orange juice
2 tablespoons of lime juice
1 cup of blueberries
1 tablespoon of yogurt (for garnishing)
Put the ginger in a pot and fry in medium heat for 2 minutes. Add 2 cups of strawberries, 1 cup of chopped pineapple, half of the chopped mango, and the orange and lime peels. Cook for 1 minute.
Slowly add water, brown sugar and the fruit juices and bring to a simmer. Stir well the whole time.
After 4 minutes, remove from the heat. Allow the mixture to cool for 5 minutes and then put it in a food processor.
Put the mixture in a bowl and add the rest of the fruits.
Stir well for 1 minute and refrigerate for 20 minutes.
Use the yogurt to garnish the fruit soup, just before you serve.
Instead of yogurt, you can use slices of fruit for garnishing. Another good idea for garnishing is grated lime that can be sprinkled over the fruits. Because fruit soup is served cold, it is important to consume it within the day, otherwise they will not taste good.
