Kale Soup Kale Soup Recipe

One of the healthiest and most nutritious vegetables is kale. Not many people eat it though, because they do not know how to use it in a meal. Others do not like the taste kale has, but that is only because they cannot imagine how it tastes combined with other ingredients. A kale soup is a great way for everyone to eat kale on a regular basis.

Kale soup

Ingredients (Serves 8 people)

3 tablespoons of extra virgin olive oil

2 chopped onions

2 tablespoons of garlic powder

1 bunch of kale with its stems removed and its leaves chopped

5 cubes of vegetable stock

6 peeled and cubed tomatoes

6 peeled and cubed potatoes

2 tablespoons of fresh parsley

1 tablespoon of fresh oregano

2 tablespoons of salt

Ingredients

Heat the olive oil in a large pot. Add the onions and garlic and cook for 3-4 minutes, until they are soft. Add the kale and cook until it is wilted (1-2 minutes). Stir in the water, the vegetable stock, half the salt, the tomatoes, and the potatoes. Boil at a low temperature for 30 minutes, slowly adding the rest of the salt. About 1 minute before you finish, add the parsley, and the oregano. 

Notes

This soup can be served both hot and cold; however, it tastes better when it is hot. Oregano can be replaced with thyme, in the same quantity.  For those who prefer more intense taste, chicken stock can be used instead of vegetable stock. The kale should be fresh. Frozen kale will still taste good enough, but definitely not as good as the fresh one, and of course, it won’t be as healthy as the fresh one.  In this particular soup, canola oil can be used instead of olive oil. It is a natural replacement and tastes equally good in that soup.
