Potato Cheddar Soup Soups Recipe for Potato Cheddar Soup

 A soup is considered to be one of the healthiest meals. For those who want to eat healthy without sacrificing taste in the meantime, soups are ideal. Munching carrot and/or celery sticks may be good for snacks, but they are definitely not good enough for meals. On the contrary, soups can fill that void beautifully. As there is a huge selection to choose from, it is for certain that there is something for everybody. One of the most delicious soups is the potato Cheddar soup. It takes a little time to prepare, but the result will be more than satisfying.

Potato-Cheddar soup (Serves 6 people)

Ingredients

10 slices of bacon

1/2 cup of butter

4 cups of low-fat milk

1 cup of sour cream

1/2 flour

3 cloves of chopped garlic

4 medium baked potatoes

1 cup of grated Cheddar cheese

2 tablespoons of salt

1 tablespoon of red pepper

Preparation

Cool, peel and cube the potatoes. Melt the butter and slowly add the flour. Cook for 3 minutes. Add the milk and boil until the mixture is thick enough. Slowly, add the potatoes and the garlic. Add half the salt and half the pepper. Simmer for 12 minutes and  then start adding the bacon, the cheese, the sour cream as well as the rest of the salt and the pepper. Once the cheese is melted the soup is ready.

Notes: For those who think that  red pepper is too intense, white pepper in the same quantity is a good alternative.  Also, ham can be used instead of bacon, for those who are on a strict diet.  It is important to stop the heating immediately after the cheese is melted, otherwise the result will not be very good. A glass of white dry wine or red sweet wine will go beautifully with the soup.
