Mexican Baked Potatoes
Try this interesting meal idea, which is fun, festive and healthy, and a great crowd pleaser for adults and kids alike. Great for parties, too!
1. Bake a large russet potato for each family member or guest. Wrap the potatoes in foil to keep them hot while you prepare the other ingredients.
2. Prepare some easy “Drunken Beans” by sauting a diced onion and a few chopped cloves of garlic in olive oil. Once translucent, add half a bottle of beer and 1 can of low-fat refried beans. Blend well and simmer until slightly thickened, top with a squeeze of fresh lime and a dash of hot sauce if desired. Double the recipe and you can serve up to 8.
3. Prepare a glass lasagna pan or large rectangular platter with sections of any or all of the following:
Thinly sliced green onions
Diced green and red bell peppers
Grated soy or dairy cheddar cheese
Sliced black olives
Spinach or romaine lettuce leaves
Sliced Jalapeno peppers
Sauted tofu cubes or other lean protein
Then, if desired, add small bowls of:
Salsa and hot sauce
Fresh lime wedges
Serve buffet or family style: Stack the foil-wrapped, hot baked potatoes in a bowl or basket lined with a colorful cloth napkin, surrounded by the dish of beans, your array of fillings, and other delicious, optional toppings.
